I have zero desire to meal plan today. But, I'm gonna do it anyways. I asked the husband what he felt like this week. His answer, spaghetti, maybe a pizza, tacos. OK. The spaghetti I can do. The pizza I can do. The tacos..lets switch that over to enchiladas. Add in a big dinner salad for another night and throw in another pasta too. I'm a carb head these days, I can't help it.
Monday: Leftover Italian Drip Beef Sandwiches. DROOL.
Tuesday: Salad with Grilled Chicken and Honey Poppyseed Vinaigrette
Wednesday: Pizza Pasta
Ingredients:
1 Pound penne pasta
1/4 Cup butter
2 Tablespoon olive oil
1 Package hot, casings removed Italian sausage (can use hot Turkey sausage)
6 Cloves garlic
2 chopped onions
28 Ounce crushed tomatoes
1 Cup light cream
2 1/2 Tablespoons dried oregano
2 Tablespoons sugar
1 1/2 Tablespoons tomato paste
2 bay leaves
Salt and Pepper to taste
1 Package fresh mozzarella
Directions:
Saute sausage, onions and garlic in butter and oil for ten minutes. Add remaining ingredients (except cream and mozzarella) and simmer low for 20 minutes. Add in cream, cook for 5 minutes more. Toss with cooked pasta. Add fresh mozzarella to individual servings.
Thursday: Chicken Enchiladas
Friday: Pizza. TBD (stay tuned)
Saturday: Mom's Meatballs and Sauce
Ingredients:
2 Cans (28 oz. each) crushed tomatoes
2 Cans (6 oz. each) tomato paste
4 Cloves chopped garlic
1 bay leaves
1/2 Cup sugar
1/4 Cup olive oil
1/2 Cup red wine
dried basil
dried oregano
2 Pound ground beef
2 egg
1 Cup bread crumbs
Directions:
Put 1st 7 ingredients in Crock pot. Sprinkle top with dried oregano & basil until you cover the surface...stir all ingredients together.
In a bowl mix the ground chuck, eggs, & breadcrumbs. Knead with hands & form into meatballs. Drop in sauce raw & cook on a low setting 8 hours.
Sunday: Meatball Sliders.
